Panevino Ristorante, the award-winning Las Vegas Italian restaurant, has added four new plant-based dishes to its popular vegan menu.
New plant-based selections include grilled vegetable lasagna ($26), featuring layers of eggplant, zucchini, squash, roasted tomatoes, roasted bell peppers and mushrooms in a creamy vodka tomato sauce, and organic whole wheat spaghetti Mediterranean ($25), tossed with roasted tomatoes, black olives, capers, garlic and parsley in a lightly spicy fresh tomato sauce. Savory entrées include organic brown rice mushroom and pesto risotto ($28), with marinated Italian mushrooms, pesto, mashed avocado and diced tomatoes, and organic “meatloaf” and mashed potatoes ($28), featuring a meatless blend of organic legumes, wild mushrooms and herbs on a bed of garlic and rosemary mashed potatoes in a fresh tomato and Kalamata-style olive sauce.
Additionally, Panevino Ristorante has also introduced new plant-based sauces and dressings including: oil-free vodka-tomato sauce, oil-free basil pesto sauce and oil-free Caesar salad dressing.
Guests are now able to enjoy these new menu items in addition to Panevino Ristorante’s popular vegan favorites like artichokes and zucchini ($13), hummus rolls ($13), “ricotta” and spinach gnocchi ($26), and decadent chocolate pudding ($10).
Panevino Ristorante’s vibrant, plant-based menu inspired by General Manager Vincenzo Granata’s own animal-free diet, was introduced in 2011. After experiencing first-hand, the delicious flavors and amazing health benefits of a plant-based diet, Granata, along with Executive Chef Mario Andreoni, sought out to create a menu designed to offer delicious and nutritious feel good food.
“After learning that it is not necessary to consume animal foods in order for our body to thrive and be in formidable health, as well as taking into consideration our guests’ requests for healthier options, our decision to develop a plant-based menu was clear. Our goal is to offer nutritious, plant-based dishes while recreating traditional, delicious flavors that reap the bountiful health benefits of whole ingredients. In doing so not only do we help ourselves, but we also help the animals, and reduce our planet pollution,” says Granata. “Our guests have asked for healthier options, and we have listened very closely.”
