From a wealth of globally-influenced brunch items and an avant-garde retreat that joins hand-crafted cocktails with ice cream to a Vegas-take on the backyard concert series and even a weekly outdoor movie viewing—The Pool District at The Cosmopolitan of Las Vegas offers one unique experience after another this summer.
Entering its fourth season, Dive-In Movies will once again transform the 65-ft digital marquee at Boulevard Pool, inside the Pool District, overlooking the famed Las Vegas Strip, into a colossal movie screen on Monday nights with a special Dive-In double feature at 7 and 9:30 p.m. From classic films to major blockbusters, Dive-In Movies allows visitors to take a dip or lounge poolside while sipping specialty cocktails and enjoying traditional movie snacks under the stars.
New this year, guests have the opportunity to enjoy the double feature while indulging in a menu from the culinary team at Jaleo by José Andrés created exclusively for Dive-In Movies. For $30 a person, guests can enjoy a Paella Picnic, featuring Manzana con hinojo y queso Manchego, sliced apple and fennel salad with Manchego cheese, walnuts and sherry; Gazpacho de remolacha con queso de cabra, beet and tomato gazpacho with goat cheese; and Paella del día, the best-known dish in Spanish cuisine made in an open-fire, wood-burning grill.
